Mashed potatoes crispy fries. Crispy mashed potatoes
Ingredients
• Potatoes — 4 medium,
• Cornstarch — 2 tablespoons
• Salt — ½ tablespoon
• Black pepper — ½ tablespoon
• Paprika — ½ tablespoon
• Fresh coriander — 1 tablespoon, very finely chopped
• Oil — for deep frying
Method of Preparation
1. Cut the potatoes into cubes and boil them in water for 7–8 minutes until just tender.
2. Drain the water and let the potatoes cool for 5 minutes.
3. Transfer the boiled potatoes into a bowl and mash them well.
4. Add cornstarch, salt, black pepper, paprika, and finely chopped coriander.
5. Mix everything well until a smooth mixture forms.
6. Transfer the mixture into a piping bag.
7. Rest the piping bag for 30 mins.
8. After resting, pipe the mixture and shape it with a knife.
9. Fry in medium heat oil until golden and crispy.
