Crunchy Cheesy Chicken Buns
Crispy golden outside, juicy cheesy chicken inside ? Perfect make-ahead snack for iftar or parties!
Ingredients
DOUGH
• 1 cup warm milk
• 2 tsp sugar or honey
• 2½ tsp instant yeast
• 1 egg
• 25g butter
• 3¼ cups flour
• 1⅓ tsp salt
CHICKEN FILLING
• 5 tsp olive oil
• 375 g chicken thighs (cut small or shredded)
• ½ tsp salt (adjust to taste)
• ½ tsp black pepper
• 1½ tsp paprika
• ½ tsp turmeric
• ½ tsp cayenne pepper (reduce if you want less spicy)
• ¾ tsp onion powder
• ½ tsp garlic powder
• ½ cup onion, finely chopped
• ⅓ cup red bell pepper, diced
• 2–3 tbsp corn
• 2 tbsp fresh parsley, chopped
• 1 tbsp ketchup mains
• 1 tbsp chili sauce
• 1 cup grated cheese
EXTRA FILLING
• Cheese slices or cheddar strips
COATING
• Milk
• Panko breadcrumbs

Method
1️⃣ Mix milk + sugar + yeast. Rest 5–10 mins.
2️⃣ Add egg, butter, flour & salt. Knead until soft dough forms. Let rise 1 hr. Divide dough into 12 equal portions
3️⃣ Cook chicken in oil with spices. Add veggies & sauces. Cool, then mix cheese.
4️⃣ Divide dough, flatten, fill with chicken + cheese slice, seal.
5️⃣Dip in milk → coat in panko.
6️⃣ Place the buns on a baking sheet lined with baking paper and let them rise for another 30 minutes, or until they have visibly doubled.
7️⃣ Fry on medium heat until golden OR bake at 180°C for 20–25 mins.
